For the dough, place and preheat the oven to 190 degrees. Place the water, oil and salt in a medium saucepan or sauté pan and bring to a boil. Remove the boiling mixture from the stove, add flour and stir. Once everything is combined, return it to the stove over low to medium heat and continue stir-frying for 1 more minute. Remove the mixture from the stove and let it cool. (At this stage, you can remove the entire mixture from the pan, place it on a sheet of baking paper and continue baking without the stove using a spatula. It will cool faster.)
Place the cooled mixture in a mixer bowl and start mixing at medium speed.
Continuing to mix, add eggs one at a time, and if after the 4th egg the consistency is not liquid, you can add the 5th egg. Continue stirring for 1 more minute.
When it reaches a squeezable consistency, place the mixture in a bag, press it onto a baking sheet, leaving spaces in between, and bake in the oven until it begins to brown.
To decorate, insert toothpicks into the triangular-shaped foam, leaving certain spaces based on the size of the dough.
For the frosting, start by beating the egg whites with a mixer for 1-2 minutes until foamy. Then add lemon juice until foamy and continue beating for another 1 minute.
Meanwhile, sift the powdered sugar into a separate bowl, add it to the mixture at regular intervals and continue stirring for 1 minute.
To test the consistency, stop the mixer and insert the spoon into the mixture and scratch it with a toothpick. If the scratch closes in 10-15 seconds, the glaze is ready.
If it closes faster, add a little more powdered sugar to thicken it. Add a drop or two of food coloring of your choice to the prepared glaze and continue mixing with a spatula or mixer.
Once the choux pastry we made has cooled, dip one surface of each into the glaze and continue sticking toothpicks onto the foam surface you prepared. Finally, paint the remaining areas with any designs you like.
